Punjabi Kadhi ( vegetable fritters cooked in a spicy chickpea and yogurt sauce)
Made the Kadhi ( sauce ) in my #instantpot and the fritters were shallow fried . .
How I made ðð½ðð½ðð½ðð½ðð½
For the gravy : sautÃ© mode IP , add a table spoon of oil , mustard seeds , cumin seeds, 1 cut green chili , 1 red chili , finely chopped ginger, garlic and onions . SautÃ© till translucent .
In a separate mixing bowl take 2 table spoons of chickpea flour, 2 cups sour yogurt ( unsweetened) , 1 cup water , salt , turmeric, chili powder and a pinch of asafoetida. Mix well until itâs a smooth batter with no lumps . Adjust the consistency to keep it watery as it will thicken while we cook.
Pour this mixture to the instant pot or pan where the onions are cooking .
Mix well and close their lid,set to manual , vent sealed at high for 4 mins .
For the fritters add chopped onions , 1 table spoon chickpea floor , arugula/ spinach leaves , 1 green chili , ginger , garlic and salt . Mix well to form a fitter like mixture . Shallow fry small balls of this mixture .
Once the gravy is cooked, transfer it to a serving bowl and add the fritters and sprinkle some paprika and cilantro(optional)
Serve with hot steamed rice ð .
