I was craving a samosa big time so I made some (ignore the shape 🤣) that are a healthier option. I used wonton wrappers and baked them instead of deep frying. For the filling I cooked 1 diced onion, 1” chunk of freshly grated ginger, 2 cloves of garlic, and diced I carrot and cooked until the onions were tender. Quick dinner before I headed out. Pumpkin buckwheat mozzarella stuffed deliciousness 💥 I cooked some buckwheat and then added pure pumpkin purée with nutmeg, sea salt, and tonnnns of black pepper. Put a layer on a baking sheet with parchment paper, put a big slice of fresh mozzarella, then top with more of the pumpkin/buckwheat mixture. Spiced tuna on a bed of lettuce and feta served with roasted pomegranate brussel sprouts 💥 For the brussel sprouts I seasoned them with olive oil, salt and pepper and roasted them at 350 for about 40 minutes tossing frequently.
