A few weeks ago, I had this amazing drink named Big Sur as part of omakase at @thewalkerinn. For those who don’t know, Big Sur is a rugged stretched central coast in California, one of the most stunning landscapes in California! ( I added a photo to my story if you are interested). The drink uses Dolin Blanc vermouth and Douglas Fir Eau de Vie ( made from green buds of Douglas Fir trees), with a touch of Islay scotch, it’s pure genius and what a light, refreshing drink with notes of pine along with woody and lightly smoked finish. The drink was also presented with dry ice, just as the foggy Big Sur in summer mornings.

1.5 oz Dolin Blanc vermouth @vermouthdolin
1 oz Clear Creek Douglas Fir Eau de Vie @clearcreekdistillery
0.25 Laphroaig 10 year Islay scotch
0.75 oz lime juice
0.75 oz simple syrup
1 drop salt water
1 dash absinthe @pernod_absinthe .
I used Ardbeg Corryreckan @ardbeg instead as my Laphroaig Triple Wood, while great but it’s from Oloroso sherry cask so I think it complicates the taste. Argbeg is peppery with the tang of crispy seaweed, which is a better substitute for me. .
