I tried something different fo

I tried something different for breakfast today. Still no eggs so I thought I'd try a sweet potato hash. I sautéed a grated onion, grated sweet potato, spiced it up and then added sautéed ground beef. On a cold fall morning it really hit the spot. Instead of focusing on what I can't have (gluten, dairy, soy, legumes, grains, eggs, nightshades) I'm getting creative with what I CAN have! It feels so great to be at peace with my food instead of feeling like I am a victim to my Hashimoto's. And yes I'm still eating my breakfast outside. It's brisk and cold but there's something so peaceful about eating with nature, feeling the sun on my face and just taking deep breaths of fresh air. Continuing with my theme of thankfulness, I am so grateful to have a lovely backyard, with beautiful landscaping surrounded by trees and a great deck from which to enjoy it all!

Don't feel like you can only be healthy if you eat from home. While we do cook most of our meals at home, we still go out to eat and order mindfully. We used to have food anxiety and if we didn't eat the same ten foods then we were eating bad. 🙈 boy are we happy that is not the case anymore. . . Don't stop your life because of food. Use your knowledge to make the best choice possible and order something similiar to what you'd eat at home. . . This is a veggie skillet cooked with no oil. And topped with 2 eggs. I remember when I was younger

I remember when I was younger and anytime we didn’t feel well my mom would say, “I’m going to make you some hot grits and that’ll help you to feel better.” This morning my daughter and I both are feeling bad, so I immediately got up and put a pot of grits on the stove. I ended up making cheese grits breakfast bowls. I made sure to tell my daughter that the grits should help her to feel better 😉.
