I made Beef and Pepper Stir-Fry from The EveryGirl's Guide to Cooking by @mariamenounos (and @undergaro) for dinner last night; I LOVED it and my husband LOVED it... and it was so easy, it almost felt like culinary cheating.
INGREDIENTS (serves 4):
1/4 cup Olive Oil
1 medium Onion, sliced
1 Red Bell Pepper, sliced
1 Green Bell Pepper, sliced
1 pound Lean Beef for Stir Fry, sliced thin
2 cloves Garlic, minded
1 can Tomato Sauce (15 oz)
Salt and Pepper, to taste
Side Item: Cooked Brown Rice
(1) Warm the oil in a large non-stick skillet over medium-high heat (I used a wok). Stir-fry the onion and the bell peppers.
(2) Add the beef strips and garlic; stir-fry for 4 minutes. Add the tomato sauce and salt and pepper to taste. Cook for another 4 minutes, or until the beef is cooked through.
(3) Serve with brown rice, if desired.
